Island Cookies

(By Aunt Shelia)

~ These are great because the shaved coconut keeps these cookies moist, even if they are frozen and then thawed!

1 2/3 C Flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Whisk together in a small batter bowl
3/4 C butter softened (when baking, I always use unsalted unless a recipe is specific)
3/4 C brown sugar
1/3 C sugar
1 tsp vanilla (for more flavor use vanilla bean)
Cream these ingredients together in large mixing bowl
1 egg
Add the egg to the creamed sugars and mix well
2 C milk chocolate chunks
1 C coconut (I use shaved coconut for better results and flavor)
3/4 C macadamias chopped (I like using regular snack macadamias because of the salt on them~it adds a punch to these decadent cookies!)

After all ingredients are mixed, use a small cookie scoop and place on ungreased pan. Bake in 375 degree oven for 8-11 mins. (I always do 9 mins so they are soft and chewy)
Makes: 3 dozen

Happy Baking!

How To Keep Your Stockpile Working For You

Once you have the stockpile it can actually cost you money if you are not careful. If a stockpile starts taking over your home then it is costing you the enjoyment of your home. You do not live in a store. There is nothing wrong with getting shelves or other items to house your stockpile, but be sure the savings in the long run outweigh the expense.
Here are some tips to keep track of what you have so you make sure you do not have to throw unopened new products away.
Inventory-I keep an inventory of what I have. I am not talking about an exact inventory, but the key to keeping a good stockpile is to know what is in the stockpile. It helps keep costs down since you are not running to the store to buy various items when they are already in your house.
Expiration-Keep an eye on your expiration dates on the items that are in your stockpile. You are not saving any money if you eat expired food that makes you sick. I know some items have a long shelf life, but many things eventually expire or go bad. Keep that in mind before you get large quantities of items.
Do you love it? Before you stock up on an item and buy extra of them to stockpile, do you love that item? Sure you could get a bunch of item XYZ free but are you willing to eat that many product XYZ’s? Decide how many of each thing you would be willing to eat. This is important on items that have many flavors like salad dressing. If your stockpiling them make sure you get a variety of flavors or make sure you really want to eat just one flavor for a long period of time.
Use it- Yes, it is nice to have a stockpile of items and know you could go a couple months without having to do a major shopping trip. It is however important to use the items. I like to make sure I use all of the meats and frozen items in my freezers every summer. I can then stock up again for the winter and know that nothing will be freezer burnt or not taste good. I choose summer since we like to cook out and I have company quite often so I can cook more meat at a time. I like being able to reach into my freezer when unexpected company come and be able to have a variety of meat to cook.

Coupon Classes Coming Soon!

While starting the coupon exchange, it became evident very quickly that many people wanted to save monies but really had no real idea just how to maximize a coupon to get the best benefits for their dollar. After being asked by a local store director to teach classes to his consumers, I began creating curriculum for such a class and realized that many others could benefit from it as well.
After working three weeks straight on it, I a proud to say I am almost done and will have many handouts and "ideas" for my classes. I am working on teaching here in GR and will also teach a few in RS as needed. Should you want to attend one of these classes, FB me, email me or leave a comment on the blog!

How Does Your Garden Grow?

Today I find myself totally frustrated with this years grow season in my area. It is reportedly snowing in the Jonah field today and here the wind is not quite hurricane gale force but enough to make my bird feeder sway a little more than comfortably for the birds to even feed, my hanging plants to get sea sick, and the new seedlings to dry out fast! FRUSTRATED!!!
I still have my peppers, tomatoes, and strawberries growing in my house at this point. And wonder if I am going to have to give up on canning this fall? My "plant everywhere" grass seed still has not arrived and so I am wondering if I may just have to give up on this year and get ready for the fall season already? Who made Mother Nature so mad? When will we be able to see the sun on a consistent basis? I'm not sure about any of this but if you have some ideas/tips/tricks, let me know! I am so beyond ready for my gardens to grow!

For The Coupon Exchange Partners

A little CONSIDERATION, a little THOUGHT for others, makes all the difference. ~ Winnie The Pooh

Carry out a random act of KINDNESS, with no expectations of reward, safe in the knowledge that one day someone might do the same for you. ~ Princess of Wales, Diana

All DREAMS can come true if we have courage to pursue them. ~Walt Disney

Tonight I write this blog with a heavy heart... I had hoped with everything I am that this coupon exchange would benefit many others around the globe, create new friendships, and assist everyone in their savings goals.
I thought that I could spend my own time, resources, and efforts creating a unique group that everyone would want to participate in and reap the rewards of, watching the exchange coupons make a full circle from ALL of our labors. Unfortunately several members have joined and put forth very little efforts for their "buddy" and ultimately the exchange. Some of this is to be expected, but after trying to assist many people who have yet to receive any coupons, (know that I didn't even have a buddy until last week; so that all of you could reap the rewards first so I cut, printed and bought many extra coupons to send out to people within the exchange hoping to get them circulated. I too, have yet to receive any other than what Marlene has been kind enough to save for me) I'm still scratching my head trying to figure out what the best form of action should be?
Each of us has a busy life with families, careers, homes, and events happening with or without this exchange. It is understandable when someone gets so busy that they couldn't mail out a packet of coupons at least once in awhile, but to continue to receive coupons from their buddy without the thought of their own obligation to the exchange, is not what I had envisioned when I created it.
Unfortunately, I have very little control over the amount of coupons, quality of coupons, and even if your exchange buddy is cutting out/printing coupons that they are willing to pass on and not waste.  I tried very hard to match people up from different regions so as to receive diverse coupons that each would benefit from. I tried very hard to give you all resources to help you build your coupon base and teach you principals of couponing so that you will become a more savvy consumer. I've tried to ask for this group to be something bigger than just mailing coupons out each week and actually use it for good in our respective communities.
All of the hard work, asking you all to please, "do unto others as you would want" has been in vain if full participation is not expected. At this juncture, I ask myself what is the best course of action? How do I remedy the problems? I am coming to each of you and again asking you ALL to think about others who are also involved in this group, (to accomplish maximum savings) as you were when you joined. This group is a voluntary group based on faith. I have very little control over someone else's actions or rather inaction's.
I hope that after reading this, it will put things in a better perspective for everyone. We all want to ultimately save; maybe someone is not real sure yet just where to find coupons, maybe they don't understand fully the exchanges function, or just simply hasn't had the time to cut them out and send them off yet? I've asked each of you to please stay in contact with your buddy; I've asked that you find out what their needs are so you can assist them in building their stockpiles, I've created the FB coupon exchange page so that everyone gets a chance to post something for the benefit of the group, and I've posted everyone involved in the exchange on my blog so that all info is out there for you to do with what you need. Short of cutting coupons for everyone who has said they would participate in the exchange, I am not sure what to do.
Yes, couponing takes time, energy and efforts, but the rewards are so HUGE. I have seen the good couponing can do, not only for your own family, but charity as well. I love knowing that when I go to the store with my coupon binder right now, I have a pantry that my family can live off of for at least 6 months, (at this moment) should something happen and I can focus on my community and charities I believe in. I love knowing that I am making my families lives better, while having touched other people's lives with couponing so they too can be a better consumer.
Should you desire to remain active in this group and reap the rewards, please contact me. Should you not contact me, I will consider your silence as you not wanting to participate any longer. (No hard feelings.) I hope that each of you take away something from this exchange to enhance your already full lives! God bless you all!

If Your Happy & You Know It...

I am fortunate to be surrounded by such good friends and my family. I realize at the simplest of moments how blessed I really am, like take for example tonight; John and I decided to use our coupons for a free movie and were lucky enough to be the only ones in the theater during the whole show! Simple happiness, I know even though we have been busy all week knocking more projects off of our master list, it was so nice to be treated to a movie that costs us nothing but time together. As I have been preparing for two weeks now to do an out of town grocery trip with my extreme amounts of coupons and all the details that make it a success, I find myself very nervous and skeptical of my "talent" when it comes to couponing. (Honestly, I think we all doubt ourselves at the register!) I am hoping that this will be my biggest "haul" to date. I'm glad I'm not making a special trip, but I hope to make it profitable!
What are your tips, tricks, ideas that you have used to make your larger shopping trips easier? I have been researching a number of apps for my droid that assist with such details as what isle, store, coupons, etc... I am hoping to find something soon that works well for couponing!
I am off now to go sort and file a 4 1/2 inch stack of coupons that I have been busy printing over the last two days! (Thank heavens my coupon buddy is happy about a stuffed envelope!) I'd love to hear from you all and learn about your shopping trips this weekend.
Happy Savings! GN!

June Couponing Begins... NOW!

I hope you all took the time "off" from the ads this last weekend to get your binders in order and prepare for this next month of coupons! Just so that everyone knows, you will have 3 inserts this weekend; (can you say wahoo?). So the clipping, sorting, and sharing begins again. :)
The coupon exchange is just getting off its little legs and beginning to grow. I have tried to deal with the small issues and hope that it will all continue to work itself out. I am very proud of you savers and bargain hunters! We have heard from one of our adopted military families and she was very happy with her first packet of coupons. So way to go!! Remember to look for those money makers that you can add to you donation stockpile; I really want to see who all participates in the July 3 donation.
I want to say a huge THANK YOU to Marlene for always thinking of me and trying to make sure I get in on a last minute deal, find that money maker, or to share some coupons with me for my zoo.
Speaking of our zoo, some of you may know that Annie, our 18 yr old lab was recently injured and had to have emergency surgery on her ear. Was a very stressful moment for us here but she has rounded the corner and seems to be on the mend. Thank you for all of you who have sent your well wishes. I have such a great friend who lives across the street from me who happens to be a vet tech that I always call upon in times of need with my zoo and she once again stepped up to the challenge, riding in the back of my truck with Annie, wiping away my tears as I cried, comforted Annie as she went under and stayed with us trying to help us get her to wake back up, (which is huge deal with such an old dog and why the vet was not going to perform the surgery in the first place) and begin walking again. She was an amazing buffer between the vet I was kinda forced to go to and even took a few mean shots from him. What an amazing friend who is such an amazing animal lover. LOVE YOU Diana!
I will be posting a few posts in the next few days that will give you direct links to vendors who gladly send out coupons as well as some ways to cut costs in your life each month. For today's savings: if you purchase from weclipusave.com for the first time you can enter in a discount code: ECPFRIENDS25 to save 25% off your first order!
